DIABETIC CAKE
4 cups mixed fruit
2 cups water
2 cups wholemeal SR flour
1 teaspoon cinnamon, ginger, mixed spice
Boil fruit then simmer for 10 minutes.
Allow to cool.
Add flour and spices and mix.
Bake 1 hour at 180 degrees.

NO-BAKE PAVLOVA
1 level Tablespoon gelatine
1/2 cup cold water
1/3 cup Carnation Evaporated Milk
3 egg whites
1/2 teaspoon vanilla
1/2 cup sugar
Soak gelatine in cold water and set aside.
Heat the evaporated milk until bubbles
appear at the edge of the saucepan.
Add gelatine mix and stir until dissolved.
Place in large bowl with unbeaten egg
whites, vanilla and sugar. Beat at high speed
with electric mixer for 10 - 15 minutes until
thick and white.
Pour into a lightly greased 20cm spring flan
pan and chill until set. Serve decorated with
whipped cream and fruit.

IMPOSSIBLE QUICHE
3/4 cup plain flour
40g butter (softened)
4 eggs
2 cups milk
1 large onion (diced)
3 bacon rashers (chopped)
1/2 cup bran
1/2 cup grated cheese
1 teaspoon basil
Mix first 4 ingredients, then add the rest
and mix well.
Bake in large greased quiche pan or tart
dish in moderate oven 30 - 40 minutes.
